Apple, Flax & Chia Muffins


This week, Natasha, the founder of Wild Child Kitchen, is sharing one of her favourite summer recipes: Apple, Flax & Chia Muffins! This yummy recipe is the perfect, healthy breakfast or afternoon snack for little and big foodies and is completely free of refined sugar and any nasties. These mini muffins are deliciously dense
and packed full of fibre, protein and omega 3 fatty acids.  


Ingredients
3/4 Cup of Gluten Free Oats 
1/2 Cup Milled Flax Seed
1/4 Cup Chia Seeds
100g Dried Apple, finely chopped
1 Cup Coconut Milk, drinking variety (soy or nut milks work too if your little foodie can have these)
1/2 Cup Water
2 tbsp Pumpkin Seed Butter (optional - if you aren’t worried about nuts then feel free to use a nut butter)
3 tsp Coconut Oil (softened, not melted) 
1 tsp Ground Cinnamon
1/2 Vanilla Pod, scraped
1/4 tsp Baking Soda
12 cup muffin tray greased with a little coconut oil

Just in case you don't have cups at home, here's a handy weight converter.


Method
Preheat your oven to 160°C.
Place the oats in a food processor and blitz until you get a flour-like consistency.
Transfer your oat ‘flour’ to a large bowl, add in all the other ingredients and mix thoroughly with a spoon.
Set aside to combine for 10 mins.
If the mixture is too thick, add a little more water to loosen (this is muffin mixture though so it should be thick and sticky!).
Spoon the mixture into the muffin tin, dividing equally between each of the cups.
Place into the middle of the oven and bake for 20 mins until lightly browned.
Remove from the oven, allow to stand for five minutes and then place the muffins on a wire rack to cool.
